These are just a wonderful way to fix a sweet craving. Packed with fibre and essential fats, these are so much healthier than chocolate or biscuits. The recipe below is JUST a guideline as these can be thrown together with a whole variety of stuff. Have a go, even the children love them!
120g Ground Almonds
120g Pitted Dated
Handful of soft dried prunes
Handful of Pistachios
Handful of Dried Cherries
Chuck everything except the coconut in the food processor.
Whizz until it starts to stick together.
Roll into balls and roll in the desiccated coconut.
Other suggestions: cocoa nibs, sesame seeds, dried apricots, walnuts, pecans……
